#103 - Banana Bread with a Surprise


Banana Bread with a Surprise
3-4 ripe bananas
1 cup sugar (I did 1/2 cup white and 1/2 cup brown)
1/2 cup butter, room temp
2 eggs, well beaten
2 cups flour (I did 1 cup white and 7/8 cup whole wheat)
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup walnuts (I added a little more cause they're good for the heart)

Mash 3 bananas, set aside. In large bowl cream sugar and butter together. Stir in eggs and mashed bananas. Stir in flour, baking soda and baking powder. Then stir in nuts. Place in greased pan (I made these in 8 small loaf pans). For the surprise, I broke off about a 1/2 - 1 inch piece of banana and pushed it down into the center of each little loaf.

Bake 350 degrees F for 25 minutes, reduce heat to 275 and bake for 10-20 minutes.

So I gave one to Pepe and told him there was a surprise in the bread. He looked at me confused and said, having a banana in banana bread isn't a surprise . . . wah, wah. :) I tried.

3/10/09 - I made this again, but added 1 cup of walnuts, only 1 1/2 cups whole wheat flour, and double the bananas (3 bananas mashed and 3 of the bananas cut into chunks (didn't mash).) This was even better than the first recipe.

you are so funny. Do the walnuts eliminate the butter? I liked the surprise. you are quite the baker.
