#566 - French Breakfast Puffs from the Pioneer Woman

I made these French Breakfast Puffs (think cinnamon sugar donuts) this morning and they are delicious!  Pepe had better hurry home before they are all gone.

I only made one change to the recipe, I rolled them in Brummel and Brown instead of butter and they taste amazing!

#565 - Outliers

Remember my new years goal to read 24 books this year?  Well, I'm slowing making progress on this goal.  I highly recommend Outliers (my sister in law, Cathy, told me about it).  It was a quick read/listen (I listened to this on tape in the car.)

Basically, it's the story behind the story of successful people.

Have you ever heard of the 10,000 hour rule?  I hadn't before this book.

#564 - grandma jerry and her 28 grandkids

This is my grandma Jerry.
She's a wonderful grandma!
She's fun to talk to and has a lot of spunk!
She also has exactly 28 grandkids (I'm grandkid #4).
So, for the month of February, each grandkid took a day and called her (some of us called a little later than our designated day).

She LOVED it!
And I think all of us grandkids had a great time talking to her!

I hope that we make this a yearly tradition.

Thanks to all my cousins for making this happen.  I think only one grandkid didn't call...not too shabby. 

And, if you get a chance, give your grandma/grandpa a call today...you won't regret it!

#563 - pineapple upside down cake - healthy

Yum, I made pineapple upside down cake for the first time (and even made it from a "healthier" recipe)...it was delicious and moist.

Here's the recipe I used from Hungry Girl.

Ingredients:
Topping
1 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1/4 cup brown sugar (not packed)
7 pineapple rings packed in juice, drained
7 maraschino cherries

Cake
Half of an 18.25-oz. box (about 1 1/2 cups) moist-style yellow cake mix
1 1/2 tsp. baking powder
1/2 cup club soda
1/4 cup no-sugar-added applesauce

Directions:
Preheat oven to 350 degrees. Spray a round cake pan with nonstick spray and set aside.

Place butter in a small microwave-safe bowl and microwave for about 15 seconds, just until melted. Add brown sugar and mix well. Spread mixture evenly along the bottom of the cake pan. Set aside.

Blot pineapple rings and cherries with paper towels to remove any excess moisture. Lay pineapple rings in an even layer in the cake pan, and place one cherry in the center of each pineapple ring. Set aside.

To make the batter, combine cake mix with baking powder in a large bowl. Mix well. Add club soda and applesauce, and stir until smooth.

Evenly pour batter into the cake pan over the fruit layer. Bake in the oven until a toothpick inserted into the center comes out clean, 30 - 35 minutes.

Allow cake to cool completely. Firmly and securely place a plate over the pan, and carefully flip so the plate is on the bottom. Gently lift pan to release the cake.

Cut into 8 slices and dig in!

We got this Norman Rockwell "praying boy" Christmas card from my friend Julia. 
I loved it so much that I framed it in the boy's room to remind them to pray.  
 
Every night after we read books and sing a song, 
I ask Oster what's next and point to this picture on the wall.

Oster and Parker got St. Patty's Day socks in the mail from grandma & grandpa.  Oster's socks have rainbows on them, so he was so happy!
